Mahi Mahi Din

I wanted to share this super quick and easy recipe that is packed full of all the vitamins and nutrients your body craves. I know that a lot of times people that think that to eat healthy means you have to spend more time in the kitchen. That is actually not true at all. As long as you stock your pantries and fridges with the right items you will always be ready to whip up something healthy in a short amount of time. Hope you enjoy! 🙂

  • Prep Time: 10 minutes
  • Cook Time: 30 minutes

Ingredients:

  • 4 (6 to 8 oz) wild caught Mahi Mahi fillet
  • 1 cup organic quinoa
  • 2 cups organic spinach
  • 1 tomato
  • Feta cheese
  • 2 tbs extra virgin, unrefined, cold pressed, organic coconut oil
  • 1 cup of organic quinoa
  • 1 tsp pink himalayan sea salt
  • 1 tsp FlavorGod garlic lovers seasoning
  • 1 tsp organic mustard seed
  • 1 tbs  aioli garlic mustard sauce (from Trader Joes)
  • 1 to 1 1/2 tbs unrefined extra virgin organic olive oil
  • 1 tbs organic balsamic vinegar
  • 1/4 tsp pepper

*All Ingredients should be organic if possible

Instructions Quinoa:

  • Heat 1 tbs coconut oil in small pot on medium high heat
  • Once melted add 1 cup of quinoa to pot
  • Mix all around
  • Add 1 1/2 cups of water (I only use spring water) to quinoa
  • Add few dashes of FlavorGod garlic lovers seasoning
  • Add few dashes of pink himalayan sea salt
  • Once the quinoa starts to boil (really boil) lower the heat to Lo and cover for 14 minutes
  • Make sure the quinoa is fluffy, if it still looks wet let it cook on low covered for a few more minutes

Instructions Mahi Mahi:

  • In a glass container prepare the Mahi Mahi
  • Add your pink himalayan sea salt, garlic lovers seasoning and mustard seed
  • Spread evenly on all sides
  • Take your aioli mustard sauce and spread evenly on all sides
  • Heat a large pan on medium high heat and add 1 tbs of extra virgin, unrefined, cold pressed, organic coconut oil
  • Once melted add your 4 fillets
  • Cook for about 4 to 5 minutes on each side depending on your stove
  • Make sure the fish is completely cooked

Instructions Salad:

  • Put your 2 cups of spinach in a large bowl
  • Add 1 diced tomato
  • Add 1 to 1 1/2 tbs unrefined extra virgin organic olive oil
  • Add 1 tbs organic balsamic vinegar
  • Add 1/4 tsp pepper
  • Add dash of pink himalayan sea salt
  • Add in feta cheese and mix

Serve and enjoy!
